METHOD
In a large bowl, combine the diced chicken breast with 1tsp of the adobo spice blend and 15ml of olive oil. Mix well to coat and let marinate for 15 minutes.
Meanwhile, cook the brown rice according to package instructions.
Heat the remaining olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until golden brown and cooked through.
Remove the chicken from the skillet and set aside. In the same skillet, add the sliced peppers, onions, and minced garlic. Sauté for 5-6 minutes until the vegetables are tender-crisp.
Return the chicken to the skillet, add the cherry tomatoes, lime juice, and the remaining adobo spice blend. Stir to combine and cook for an additional 2-3 minutes.
Serve the adobo chicken and vegetable mixture over the cooked brown rice. Garnish with fresh coriander.

Adobo, derived from the Spanish word 'adobar' meaning 'to marinate', has roots in both Spanish and Latin American cuisines. Originally a method of preserving meat using salt, vinegar, and spices, adobo evolved into a flavourful cooking technique. Our version combines this traditional spice blend with lean chicken breast, creating a healthier adaptation that pays homage to its rich culinary heritage whilst catering to modern nutritional needs.
