About the Recipe

This flavourful and easy-to-make dish combines tender chicken with a delicious Za'atar-spiced couscous, perfect for a wholesome weeknight dinner. The aromatic and versatile Za'atar spice blend adds depth and complexity to this simple yet satisfying meal.

METHOD

  1. Preheat the oven to 200°C (392°F).

  2. Rub the chicken breasts with 1 tsp of Za'atar spice blend, olive oil, salt, and pepper. Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the centre.

  3. While the chicken is cooking, prepare the couscous. In a large bowl, combine the couscous and the remaining 1 tsp of Za'atar spice blend. Pour the hot vegetable or chicken stock over the couscous, cover with a lid or cling film, and let it sit for 5-10 minutes, or until the liquid is absorbed and the couscous is tender.

  4. Fluff the couscous with a fork, then stir in the lemon zest, lemon juice, parsley, mint, crumbled feta cheese, and toasted pine nuts.

  5. Serve the Za'atar-spiced chicken on a bed of couscous, garnished with additional parsley and mint, if desired.

4/5 boneless, skinless chicken breasts

2 tsp Za'atar spice blend

2 tbsp olive oil

Salt and pepper, to taste

360g couscous

450ml vegetable or chicken stock

1 lemon, zested and juiced

2 tbsp chopped fresh parsley

2 tbsp chopped fresh mint

100g crumbled feta cheese

50g toasted pine nuts
