Embark on a culinary journey with this Thai-inspired Spiced Beef Stir-Fry served with steamed rice. It's a healthy, flavour-packed meal that's perfect for busy weeknights when you want something nutritious and delicious, offering a balance of protein, vegetables, and carbohydrates.

METHOD

  1. Rinse the rice in cold water until clear. Add to a rice cooker or large pot with 500ml of water. If using a pot, bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed and rice is tender.

  2. While rice cooks, mix sliced beef with 1 teaspoon of Thai 7 Spice Blend in a bowl. Marinate for 10 minutes.

  3. Heat 1 tablespoon oil in a large wok over high heat. Add marinated beef, stir-fry for 2-3 minutes until browned. Remove and set aside.

  4. In the same wok, add remaining oil. Stir-fry garlic and ginger for 30 seconds until fragrant.

  5. Add onion, peppers, sugar snap peas, and baby corn. Stir-fry for 3-4 minutes until vegetables are crisp-tender.

  6. Return beef to the wok. Add soy sauce, fish sauce, lime juice, and remaining Thai 7 Spice Blend. Stir-fry for 2 minutes to combine flavours.

  7. Remove from heat and stir in fresh coriander.

  8. Fluff the cooked rice with a fork.

  9. Serve the stir-fry over beds of steamed rice, garnished with chopped peanuts if desired.

  • 1 lime, juiced

  • 1 tbsp fresh coriander, chopped (optional)

  • 30g unsalted peanuts, roughly chopped (optional)
